The journey…

Currently Chef Patron at renowned London Restaurant ZOILO & the beloved FLORENCIO PIzzeria; Diego began his career in Buenos Aires in 1993, when he joined renowned Argentine Chef Francis Mallmann as an apprentice.

In 1998, he fulfilled his dream of cooking in Europe, when he joined the team of Casa Nicolasa in San Sebastian.

He later took a position at the Michelin three star restaurant El Bulli, under Ferran Adria. In 2001, he moved to New York to join Aquavit, the award-winning Swedish restaurant, run then by chef Marcus Samuelsson.

Born in Buenos Aires, Diego spent most of his youth in Chubut, Patagonia, where he discover his love for food & wild products.
